4-6 medium-sized rainbow carrots
30ml (2 tbsp) Extra virgin olive oil
Salt and pepper
Step by Step Instructions
Preheat oven to 180ºc
Put the carrots in a roasting tin – make sure that they fit snugly but don’t sit on top of each other.
Drizzle with olive oil and season with salt and pepper (to taste)
Roast for 20-25 mins depending on the thickness or the carrots and also whether you like these al dente (with a bit more crunch which is how Italians typically eat their veg) or a bit softer.
