A great way to create a more interesting flavour with carrots and if you can find rainbow carrots (they are becoming more and more common) kids tend to love this dish as it is so vibrant and colourful and the flavour of the carrots is so much more interesting and complex than simply boiling or steaming. Not a whole meal on its own but a great side dish.

Ingredients

  • 4-6 medium-sized rainbow carrots
  • 30ml (2 tbsp) Extra virgin olive oil
  • Salt and pepper
Rainbow Carrots are becoming increasingly common – plus kids seem to love them. This dish is so vibrant and beautiful – plus – when you boil or steam Carrots you lose a bit of the flavour; Roasting them helps preserve their flavour. Not a complete dish, but a good side dish.

Step by Step Instructions

Step 1

Preheat oven to 180ºc

Step 2

Put the carrots in a roasting tin – make sure that they fit snugly but don’t sit on top of each other.

Step 3

Drizzle with olive oil and season with salt and pepper (to taste)

Step 4

Roast for 20-25 mins depending on the thickness or the carrots and also whether you like these al dente (with a bit more crunch which is how Italians typically eat their veg) or a bit softer.
